Preparation Method :
- Heat 2 tablespoons oil in a non-stick pan. Add mushrooms, Saute till light brown and dry.
- Add onion, carrot, capsicum, pineapple and paneer with salt and freshly crushed pepper. Cook for about 2-3 minutes.
- Remove all vegetables and paneer from the pan and keep aside.
- To prepare the sauce, heat 2 tablespoons oil in a clean pan.
- Simmer, add garlic and green chilies. Stir for about 30 seconds till garlic just changes colour.
- Add all sauces, vinegar, salt, pepper with cornflour paste, stirring continuously, add vegetables and paneer. Cook for 1-2 minutes on low heat.
- While serving, heat the iron plate and scatter 1 tablespoon butter. Place the cabbage leaves on the plate and arrange rice on it.
- Leave on low flame for 2 minutes for the rice to get heated. Place the hot vegetables with sauce in the on the bed of the rice.
- Place the iron plate on the on the wooden tray. Serve sizzling hot.
INGREDIENTS
- 100 grams paneer - cut into small cubes
- 6 mushrooms - cut into halves
- 1 small onion - cut into 4 pieces and separated
- 1 carrot - cut into small cubes and boiled
- ½ capsicum - cut into ½" pieces
- 1 slice of tinned pineapple - cut into small pieces
- Freshly crushed pepper and Salt , to taste
- 50 ml Cooking oil
Sauce
- 50 ml Cooking oil
- 6 flakes garlic - crushed
- 2 green chilies - deseeded & chopped finely
- ½ tablespoon soya sauce
- A few drops tabasco sauce
- 1 tablespoon red chili sauce
- 3 tablespoon tomato ketchup
- 1 tablespoon vinegar
- ¼ teaspoon pepper and salt, to taste
- 2 tablespoon cornflour dissolved in 1 cup of water
To Serve
- 2 tablespoons butter
- Boiled rice with salt and lemon juice
