Preparation Method :
- Heat the oil in a heavy-based pan, add the cubes of paneer and fry, turning occasionally, for 5-7 minutes or until they are golden all over. Remove paneer from the pan and set aside.
- Steam the spinach over a pan of boiling water for 3-4 minutes, until it has wilted, then leave to cool.
- Place the spinach in a blender or food processor and work briefly to puree. Set aside.
- Fry the onion, garlic, chilli and ginger to the hot oil, stirring for 3-5 minutes or until softened.
- Stir in the turmeric, ground coriander, chilli powder and cumin, fry for a minute.
- Add the pureed spinach, stir well to combine, cover the pan and simmer for about 2-3 minutes.
- Stir in the fried paneer and cook, covered, for another 5 minutes. Adjust the seasoning with salt and serve hot.
INGREDIENTS
- 225 grams cottage cheese (paneer) cut into small cubes
- 350 grams young leaf spinach, washed and dried
- 1 onion, chopped
- 2-3 garlic cloves, crushed
- 2 tablespoons IDHAYAM sesame oil
- 1 large green chilli, deseeded and chopped
- 1 tablespoon grated fresh root ginger
- 1 teaspoon turmeric
- 2 teaspoon ground coriander
- Chilli powder and salt, to taste
- ½ teaspoon ground cumin
