STIR-FRIED CHILLI-GARLIC PRAWNS

Preparation Method :
- In a wok or large pan, heat the oil over a low heat and fry the garlic halves gently until they are tinged with golden brown.
- Stir in the chopped tomatoes, crushed and chopped chillies with salt, lemon juice and mango chutney.
- Add the prawns to the pan and stir-fry briskly, mix the prawns with the other ingredients until they are heated through.
- Transfer to a warm serving dish and garnish with coriander sprigs and chopped spring onions. Serve immediately.
INGREDIENTS
- 20 - 24 peeled, cooked king prawns
- 2 tablespoon Cooking oil
- 150 grams tomatoes, chopped
- 1 teaspoon crushed dried red chillies
- 4 garlic cloves, roughly halved
- 1 teaspoon lemon juice
- Mango Chutney, to taste
- 1 fresh green chilli, chopped
- Salt, to taste
- Fresh coriander sprigs and chopped spring onions, to garnish
