PRAWN AND VEGETABLE BALTI

Preparation Method :

  • Thaw the prawns and drain them of any excess liquid.
  • Heat the oil with the onion seeds and curry leaves in a karahi, wok or heavy frying pan.
  • Add the prawns to the spicy mixture in the wok and stir-fry until the liquid has evaporated.
  • Next, add the peas, sweet corn, courgette and red pepper. Continue to stir for 3-5 minutes.
  • Finally, add the crushed coriander seeds and chillies, salt to taste and the lemon juice.
  • Serve immediately, garnished with fresh coriander leaves.

INGREDIENTS

  • 200 grams frozen cooked peeled prawns (shrimp)
  • 2 tablespoon Cooking oil
  • ¼ teaspoon onion seeds
  • 4-6 curry leaves
  • 125 grams frozen peas
  • 125 grams  frozen sweet corn
  • 1 large courgette (zucchini), sliced
  • 1 medium red (bell) pepper, seeded and roughly diced
  • 1 teaspoon crushed coriander seeds
  • 1 teaspoon crushed dried red chillies
  • Salt to Taste
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh coriander (cilantro) leaves, to garnish
