JHINGAY BHARAY TAMATAR

Preparation Method :

  • Slice off the tops of tomatoes carefully and remove the pulp with a spoon or grapefruit knife.
  • Place the tomatoes in a greased ovenproof dish.
  • Mix all the spices together with the prawns and set aside.
  • Heat the oil in a frying pan and stir-fry the onion with green pepper for about a minute.
  • Add the drained prawns and fresh coriander and cook over a low heat, stir for about 5-7 minutes.
  • Leave the prawns to cool for about 5 minutes. Fill each tomato with a little of the prawn mixture, using a table- or dessertspoon.
  • Place under a preheated hot grill for 10-12 minutes. Remove from the grill and garnish with the large prawns and sprigs of coriander.

INGREDIENTS

  • 6 large tomatoes, Wash and dry the tomatoes.
  • 250 grams peeled prawns
  • 3 tablespoons Cooking oil
  • 1 medium onion, peeled and finely chopped 
  • ½ green pepper, diced 
  • 1 teaspoon chopped fresh coriander
  • 1 teaspoon crushed garlic 
  • 1 teaspoon chilli powder 
  • ½ teaspoon ground coriander 
  • ½ teaspoon salt 

Garnish 

  • 6 jumbo prawns 
  • Fresh coriander sprigs
