Preparation Method :
- Slice off the tops of tomatoes carefully and remove the pulp with a spoon or grapefruit knife.
- Place the tomatoes in a greased ovenproof dish.
- Mix all the spices together with the prawns and set aside.
- Heat the oil in a frying pan and stir-fry the onion with green pepper for about a minute.
- Add the drained prawns and fresh coriander and cook over a low heat, stir for about 5-7 minutes.
- Leave the prawns to cool for about 5 minutes. Fill each tomato with a little of the prawn mixture, using a table- or dessertspoon.
- Place under a preheated hot grill for 10-12 minutes. Remove from the grill and garnish with the large prawns and sprigs of coriander.
INGREDIENTS
- 6 large tomatoes, Wash and dry the tomatoes.
- 250 grams peeled prawns
- 3 tablespoons Cooking oil
- 1 medium onion, peeled and finely chopped
- ½ green pepper, diced
- 1 teaspoon chopped fresh coriander
- 1 teaspoon crushed garlic
- 1 teaspoon chilli powder
- ½ teaspoon ground coriander
- ½ teaspoon salt
Garnish
- 6 jumbo prawns
- Fresh coriander sprigs
