Preparation Method :
- In a bowl, mix together the spices with the chopped tomatoes. If using frozen prawns, defrost and leave in a bowl of water.
- Heat the oil over a medium heat and when the oil is hot add mustard ,onion seeds and the curry leaves.
- Remove the pan from the heat and with a wooden spoon gradually add the tomato mixture. Stir-fry for about 5 minutes over a medium heat.
- Sprinkle over the fresh coriander and the chopped green chillies. Add the single cream and stir to mix. Turn off the heat. Serve hot, garnished with sprigs of fresh coriander.
INGREDIENTS
- 300 grams peeled prawns, fresh or frozen
- 450 grams can of tomatoes, chopped
- ½ teaspoon diced and crushed ginger root
- ½ teaspoon, crushed garlic
- 1 teaspoon chilli powder
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- 4 tablespoon Cooking oil
- 1 teaspoon salt
- ½ teaspoon mixed mustard and onion seeds
- 5 curry leaves
- 2 tablespoons fresh coriander, chopped, plus extra to garnish
- 2 green chillies, chopped
- 3 tablespoons single cream
