SPICY PORK BALCHAO

Preparation Time :

Cooking Time :
1 hour 20 minutes

Preparation Method :

  • Heat 2 tablespoon of the oil in a karahi and add ginger and garlic, Fry for 20 seconds.
  • Grind the dried chilies, cloves, cumin seeds, cinnamon stick and peppercorns to a fine powder.
  • Add the spice mix to the pan and fry for a further 30 seconds, stirring frequently .
  • Add the pork and turmeric and increase the heat slightly. Fry until the meat starts to release its juices, stirring regularly.
  • Add the water, tomato puree and chilli powder and bring to the boil. Cover the pan and simmer gently for about 30 minutes.
  • Heat the remaining oil and fry the onion until browned, stirring regularly.
  • Add the fried onion to the pork along with the salt, sugar and vinegar.
  • Cover and simmer for at least 30 minutes or until the pork is tender. Remove from the heat and spoon into a serving dish. Garnish with chilies and serve.

INGREDIENTS

  • 70 ml Cooking oil
  • 1 tablespoon grated fresh root ginger
  • 1 tablespoon crushed garlic
  • 1 in piece cinnamon stick, broken up
  • 2-4 dried red chillies, chopped or torn
  • 4 cloves
  • 2 teaspoon cumin seeds
  • 10 black peppercorns
  • 750 grams cubed leg of pork, crackling and visible fat removed
  • 1 teaspoon ground turmeric
  • 250 ml warm water
  • 1 tablespoon tomatos puree (paste)
  • ½ teaspoon chili powder (optional)
  • 1 large onion, finely sliced
  • 1 tablespoon granulated sugar
  • 2 tablespoon cider vinegar
  • Salt to taste 
  • Fresh chilies, to garnish
