                    Preparation Method :
- Place the crushed onions, chillies, curry paste, vinegar, tomato puree, fenugreek seeds, turmeric and mustard seeds or powder in a bowl, with the salt and sugar.
 - Add the pork cubes and mix well. Cover and marinate for about 2 hours, then tip into a large, heavy pan.
 - Stir in the water.Bring to the boil and simmer gently for 2 hours. Serve hot with the rice.
 
INGREDIENTS
- 100 grams deep-fried onions, crushed
 - 4 fresh red chillies
 - 60 grams vindaloo curry paste
 - 6 tablespoon white wine vinegar
 - 100 grams tomato puree (paste)
 - ¼ teaspoon fenugreek seeds
 - 1 teaspoon ground turmeric
 - 1 teaspoon crushed mustard seeds / ½ teaspoon mustard powder
 - Salt, to taste
 - 2 teaspoon granulated sugar
 - 1 kg boneless pork spareribs, cubed
 - 300 ml water plain boiled rice, to serve
