PEPPER LAMB CHOPS

Preparation Method :
- Combine lamb chops with ginger-garlic paste, drained yoghurt, coriander and mint paste in a bowl and leave to marinate for an hour.
- Then add sufficient salt, crushed cumin seeds, crushed pepper and chili flakes and 2 tablespoons butter. Mix well and set aside for another 10 minutes.
- Meanwhile, preheat the oven to 200° C/400° F/ Gas 6.
- Thread the marinated lamb chops onto skewers and bake in the preheated oven, turning regularly and basting occasionally with remaining butter.
- Cook for 10 minutes till the lamb chops are golden and cooked through.
- Serve hot.

- 400 grams New Zealand lamb chops
- 2½ tablespoons ginger-garlic paste
- 150 grams drained (hung) yoghurt
- 3 tablespoons fresh coriander, finely chopped
- 2½ tablespoons mint paste
- Salt to taste
- 2 teaspoons cumin seeds, lightly roasted and crushed
- 2 teaspoons black peppercorns, crushed
- 1 teaspoon finely chopped green chili
- ½ teaspoon crushed dried red chili or chili flakes
- 4 tablespoons butter, melted
