MINCED LAMB WITH FRESH CORIANDER

Preparation Method :
- Grind the ginger, garlic and green chillies to a paste with half the coriander leaves.
- Cook the eggs in boiling hot water for 12 minutes. Cool, peel, halve and remove the yolks. Cut the whites into quarters. Set aside.
- Heat the oil in a thick-bottomed pan and add the cumin seeds, cardamom pods, cinnamon and cloves.
- Fry for 10 seconds, then add the onions. Cook until the onions turn golden brown. Add the ginger-garlic paste and saute for 30 seconds.
- Add the minced lamb and cook on a high heat, stirring continuously, for 10 minutes.
- Stir in the ground coriander, then add water and bring to the boil. Reduce the heat, cover and simmer for 30 minutes, stirring occasionally.
- Add the salt, garam masala, crushed peppercorns and lemon juice.
- Stir in the remaining fresh coriander and the fresh mint and mix well. Garnish with the boiled egg quarters.

- 2 teaspoon garam masala powder
- 8 black peppercorns, crushed
- 4 tablespoons lemon juice
- 2 tablespoon chopped fresh mint leaves
