MINCED LAMB WITH FRESH CORIANDER

Preparation Time :

Preparation Method :

  • Grind the ginger, garlic and green chillies to a paste with half the coriander leaves.
  • Cook the eggs in boiling hot water for 12 minutes. Cool, peel, halve and remove the yolks. Cut the whites into quarters. Set aside.
  • Heat the oil in a thick-bottomed pan and add the cumin seeds, cardamom pods, cinnamon and cloves.
  • Fry for 10 seconds, then add the onions. Cook until the onions turn golden brown. Add the ginger-garlic paste and saute for 30 seconds.
  • Add the minced lamb and cook on a high heat, stirring continuously, for 10 minutes.
  • Stir in the ground coriander, then add water and bring to the boil. Reduce the heat, cover and simmer for 30 minutes, stirring occasionally.
  • Add the salt, garam masala, crushed peppercorns and lemon juice.
  • Stir in the remaining fresh coriander and the fresh mint and mix well. Garnish with the boiled egg quarters.

  • 15 garlic cloves, chopped
  • 5 green chillies, chopped
  • 50 grams fresh coriander leaves, chopped
  • 6 eggs
  • 2 tablespoon sesame oil
  • 2 teaspoon cumin seeds
  • 6 green cardamom pods
  • 2.5cm stick cinnamon
  • 8 cloves
  • 5 medium-sized onions, chopped
  • 650 grams lean minced lamb
  • 2 tablespoon ground coriander
  • 2 teaspoon salt
  • 2 teaspoon garam masala powder
  • 8 black peppercorns, crushed
  • 4 tablespoons lemon juice
  • 2 tablespoon chopped fresh mint leaves
