LAMB DOPIAZA

Preparation Method :

  • Make a fine paste of the tomatoes, ginger and garlic. Stir in the powdered spices, salt and yogurt until smooth.
  • Heat the oil in a saucepan. Add the whole spices and when sizzled, add the chopped onions and cook until browned.
  • Add the lamb to the pan and seal the outsides. Add the tomato-yogurt paste and bring to a boil while stirring very often.
  • Reduce the heat, cover and cook for about an hour or until the lamb is tender.
  • Add the sliced onions and stir every 10 minutes.
  • When the lamb turns tender and the sauce reduced to a creamy consistency with a tangle of sweet, sliced onions.
  • Adjust seasoning with salt, chilli powder or lemon juice. Stir in the chopped coriander and serve with Chapati.

INGREDIENTS

  • 550 grams leg of lamb, cubed
  • 75 ml Cooking oil
  • 50 grams onions, half chopped and half sliced
  • 100 grams tomatoes, quartered
  • 1 tablespoon fresh root ginger, peeled
  • 6 large garlic cloves
  • ½ teaspoon turmeric
  • 1 teaspoon ground cumin
  • 2 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 4 green cardamom pods
  • 3 cm cinnamon stick
  • 4 cloves
  • 9 black peppercorns  
  • 50 grams Greek yogurt
  • Lemon juice, to taste
  • Chilli powder, to taste
  • Salt, to taste
  • Handful of chopped fresh coriander leaves
