Preparation Method :
- Wash the meat pieces. Deseed dry, red chillies and break into pieces.
- Rub the meat with curd, ginger-garlic paste, deseeded red chillies and salt. Keep the marinated meat aside for about 2 hours in the refrigerator.
- Heat oil in pan, add in only the mutton pieces from the marinade to the hot oil.
- Cook the mutton, stirring continuously, until dry and oil separate.
- Add the marinade with water and cook the mutton again for another 20 minutes.
- Reduce the flame and simmer for 5 minutes. Remove from fire. Check for tenderness.
- Dry the excess water till the masala coats the meat. Add green coriander. Mix well and serve hot.
INGREDIENTS
- 500 grams lamb
- 200 ml water
- 50 ml Cooking oil
- 100 grams green coriander
- 100 grams thick curd - beaten till smooth
- 2 teaspoon ginger-garlic paste
- 9 dry red chilies
- Salt to taste
