BALTI LAMB KOFTAS WITH VEGETABLES
These mouth-watering koftas look very attractive when served on a bed of vegetables, especially if you make them quite small.

Preparation Method :
- Put the minced lamb into a food processor or blender and process for about 1 minute.
- Transfer the lamb to a medium bowl.
- Add the dry spices, garlic, chilli powder, salt, fresh coriander and onion, and use your fingers to blend the kofta mixture thoroughly. Cover and set aside in the refrigerator.
- Heat the oil for the vegetables in a karahi, wok, or deep pan. Add the spring onions and stir-fry for 2 minutes.
- Add the peppers, corn, butter beans, cauliflower and green chillies, and stir-fry over high heat for about 2 minutes. Set to one side.
- Roll small pieces of the kofta mixture into round, golf-ball size portions. You should have at least 12 and 16 koftas.
- Heat the oil for the koftas in a frying pan. Lower the heat slightly and add the koftas, a few at a time.
- Shallow-fry each batch, turning the koftas occasionally, until they are brown. Remove from the oil with a slotted spoon and drain on kitchen paper.
- Put the vegetable mixture back over medium heat and add the cooked koftas.
- Stir the mixture gently for about 5 minutes, or until everything is heated.
- Garnish with the chopped mint and coriander, shredded ginger, and lime slices. Just before serving, sprinkle over the lemon juice.
INGREDIENTS
- 450 grams lean minced (ground) lamb
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon crushed garlic
- 1 teaspoon chilli powder
- 1 teaspoon salt
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 small onion, finely diced
- 150 ml Cooking oil
For the vegetables
- 3 tablespoons Cooking oil
- 1 bunch spring onions (scallions), roughly chopped
- ½ large red (bell) pepper, seeded and chopped
- ½ large green (bell) pepper, seeded and chopped
- 175 grams corn
- 250 grams canned butter (lima) beans
- ½ small cauliflower, cut into florets
- 4 fresh green chillies, chopped
To garnish
- 1 teaspoon chopped fresh mint
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 tablespoon shredded fresh root ginger
- Lime slices
- 1 tablespoon lemon juice
