SWEET AND SOUR FISH

Preparation Time :
40 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Thoroughly rinse and clean the fish. Score the skin diagonally on both sides of the fish.
  • Coat the fish lightly on both sides with corn flour, dust off if any excess.
  • Heat the oil in a fry pan or kerahi or wok and slide the fish into the pan.
  • Reduce the heat and fry the fish until brown and crisp for about 5minutes on both sides.
  • Remove the fish with a spatula and place on a platter.
  • Heat a pan ,Add in the garlic, ginger and shallots with 10 ml oil . Fry until golden.
  • Add the cherry tomatoes and cook until they burst open.
  • Stir in the vinegar, sugar and tomato ketchup. Simmer gently for 2 minutes and adjust the seasoning.
  • Mix the remaining corn flour with the water . Stir into the sauce and heat until it thickens.
  • Pour the sauce over the fish and garnish with shredded spring onions and coriander leaves.

INGREDIENTS

  • 1 large or 2 medium-size fish such as snapper or mullet, heads removed
  • 1 tablespoon corn flour
  • 125 ml Cooking oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped root ginger
  • 2 tablespoons chopped shallots
  • 250 grams cherry tomatoes
  • 2 tablespoon red wine vinegar
  • 2 tablespoon granulated sugar
  • 2 tablespoon tomato ketchup
  • 4 tablespoon water
  • Salt and black pepper
  • Coriander leaves and shredded spring onions to garnish
