- Wash and cut the cod into about 6 pieces. In a small bowl mix the ingredients for the marinade and pour over the cod pieces. Leave to marinate for about 1 hour.
- Meanwhile, peel, boil and mash the potatoes, and set aside. Preheat the oven to 400°F / 200°C / Gas 6.
- Heat the oil in a frying pan and fry the sliced onions along with the onion seeds.
- Gradually add the courgettes and tomatoes and ground spices, with fresh coriander, salt and finally the lemon juice and fry for about 5-7 minutes. Set aside.
- Place the marinated cod under a preheated, hot grill for about 10-12 minutes, turn gently once.
- Arrange in an ovenproof dish and spoon the vegetable mixture over the top of the grilled cod pieces. Cover this with the mashed potato. Bake in the preheated oven for about 15 minutes.
- Remove the dish from the oven and sprinkle on the grated cheese. Place under a hot grill until the cheese is melted and golden. Serve immediately.

- 3 tablespoons lemon juice
- 650 grams potatoes
- 4 tablespoons Cooking oil
- 1 medium onion, peeled and sliced
- ½ teaspoon onion seeds
- 2 medium courgettes, thinly sliced
- 2 medium tomatoes, diced
- ½ teaspoon ground ginger
- ½ teaspoon garlic powder
- ½ teaspoon garam masala
- ½ teaspoon chilli powder
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- 2 tablespoons chopped fresh coriander
- ½ teaspoon salt
- 1 teaspoon lemon juice
- 225 grams Cheddar cheese, grated
