Preparation Method :
- Heat the oil in a non-stick pan and fry the fish pieces for 5 minutes, turn once gently.
- Remove the pieces and place on a plate. Fry the onions in the remaining oil along with the fenugreek and curry leaves.
- Add the spices, seasonings and creamed coconut and continue to fry for about 5 minutes over a low heat.
- Stir in the pieces of fish and the fresh coriander and cream or yogurt. Cover and heat for at least 4 minutes before serving.
INGREDIENTS
- 500 grams monkfish, cut into 2.5 cm pieces
- 5 tablespoons Cooking oil
- 2 medium onions, peeled and finely chopped
- 50 grams fenugreek leaves
- 4 curry leaves
- 1 teaspoon chilli powder
- ½ teaspoon crushed garlic
- ½ teaspoon diced and crushed ginger root
- ¼ teaspoon turmeric
- 1 teaspoon salt
- 1 teaspoon creamed coconut
- 2 tablespoons fresh coriander
- 5 tablespoons fresh single cream or yogurt
