Preparation Method :
- Add the ground cumin, mango powder, ground coriander, chilli powder, salt, ginger and corn flour to the skinned fish cubes. Mix together thoroughly until the fish is well coated.
- Heat the oil in a karahi, wok or large, deep pan. Lower the heat slightly and add the 4 fish pieces at a time. Fry for about 3 minutes, turning constantly.
- Drain the fish pieces on kitchen paper and transfer to a serving dish. Keep hot while you fry the remaining fish pieces.
- Fry the chopped peppers in the oil remaining in the pan for about 10 -12 minutes. They should still be slightly crisp. Drain on kitchen paper.
- Add the cooked peppers to the fish and garnish with the cherry tomatoes. Serve.
