CARNIVAL CHICKEN WITH SWEET POTATO MASH

Preparation Method :
- Put the chicken breasts into a non-metallic dish.
- Mix together all the ingredients for the marinade in a measuring jug then pour the marinade over the chicken, making sure all the pieces are well coated.
- Cover and leave to marinate in the refrigerator overnight.
- When you are ready to cook, arrange the chicken breasts on a grill pan and cook them under a preheated moderate grill for about 10 minutes on each side.
- Meanwhile, boil the sweet potatoes in their skins for 20 minutes until soft.
- Drain well then peel. Mash the potatoes well and let them dry a bit, then stir in the fromage frais and season with salt and pepper.
- Slice the chicken breasts and serve with the mash.
- Garnished with the flat leaf parsley.
INGREDIENTS
- 6 boneless, skinless chicken breasts
- Flat leaf parsley sprigs, to garnish
Marinade
- 200 ml sweet sherry
- 2 teaspoon Angostura bitters
- 2 tablespoons light soy sauce
- 2 tablespoons chopped fresh root ginger
- Pinch of ground cumin
- Pinch of ground coriander
- 2teaspoon dried mixed herbs
- 2 small onions, finely chopped
- 100 ml Chicken Stock
Sweet Potato Mash
- 4 sweet potatoes
- 4 tablespoons fromage frais
- Salt and pepper
