CHILLI BEEF WITH BASIL

Preparation Method :
- Heat the oil in a karahi or wok. Add the whole basil leaves and fry for about 1 minute until crisp and golden. Drain on kitchen paper.
- Remove the pan from the heat and pour off all but 30 ml / 2 tablespoons of the oil.
- Cut the steak across the grain into thin strips.
- Mix the Worcestershire sauce and sugar in a bowl.
- Add the beef, mix well, then cover and leave to marinate for about 30 minutes.
- Reheat the oil until hot, add the chilli, garlic, ginger, and shallot, and stir-fry for 30 seconds.
- Add the beef and chopped basil, then stir-fry for about 3 minutes.
- Flavour with lemon juice, and add salt and pepper to taste.
- Transfer the chilli beef to a warmed serving plate, sprinkle over the basil leaves to garnish and serve immediately with rice.
INGREDIENTS
- 100 ml Cooking oil
- 16 - 20 large fresh basil leaves
- 200 grams rump steak
- 2 tablespoons Worcestershire sauce
- 1 teaspoon soft dark brown sugar
- 2 fresh red chillies, sliced into rings
- 3 garlic cloves, chopped
- 1 teaspoon chopped fresh root ginger
- 1 shallot, thinly sliced
- 2 tablespoons finely chopped fresh basil leaves, plus extra to garnish
- Squeeze of lemon juice
- Salt and ground black pepper
- Rice, to serve
