BEEF WITH GREEN BEANS

Preparation Time :
30 minutes

Cooking Time :
1 hour 20 minutes

Preparation Method :

  • Blanch, rinse and drain the beans in water and set aside.
  • Heat the oil in a large heavy pan and gently fry the onion slices until golden brown.
  • Mix the ginger pulp, garlic, chilli powder, salt, turmeric and chopped tomatoes in a bowl.
  • Spoon the ginger and garlic mixture into the pan and stir-fry with the onion for 5 minutes.
  • Add the beef and stir-fry for a further 2-3 minutes.
  • Pour in the water, bring to the boil and lower the heat. Half cover the pan and cook until most of the water has evaporated and the meat is tender.
  • Add the green beans and mix together.
  • Then add the fresh coriander , green chillies and red pepper. Cook the mixture, stirring, for a further 5 minutes, or until the beans are tender.
  • Spoon into a large serving bowl . Serve the beef hot, with warm chapattis.

INGREDIENTS

  • 250 grams fine green beans, cut into small pieces
  • 1 tablespoon Cooking oil
  • 1 medium onion, sliced
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon chilli powder
  • ¼ teaspoon  ground turmeric
  • 2 tomatoes, chopped
  • 500 grams lean beef, cubed
  • 500 ml water
  • 1 red (bell) pepper, seeded and sliced
  • 1 tablespoon chopped fresh coriander (cilantro)
  • 2 fresh green chillies, chopped
  • Salt to taste  
  • Warm chapattis, to serve
