BEEF WITH GREEN BEANS

Preparation Method :
- Blanch, rinse and drain the beans in water and set aside.
- Heat the oil in a large heavy pan and gently fry the onion slices until golden brown.
- Mix the ginger pulp, garlic, chilli powder, salt, turmeric and chopped tomatoes in a bowl.
- Spoon the ginger and garlic mixture into the pan and stir-fry with the onion for 5 minutes.
- Add the beef and stir-fry for a further 2-3 minutes.
- Pour in the water, bring to the boil and lower the heat. Half cover the pan and cook until most of the water has evaporated and the meat is tender.
- Add the green beans and mix together.
- Then add the fresh coriander , green chillies and red pepper. Cook the mixture, stirring, for a further 5 minutes, or until the beans are tender.
- Spoon into a large serving bowl . Serve the beef hot, with warm chapattis.

- 250 grams fine green beans, cut into small pieces
- 1 tablespoon Cooking oil
- 1 medium onion, sliced
- 1 teaspoon grated fresh root ginger
- 1 teaspoon crushed garlic
- 1 teaspoon chilli powder
- ¼ teaspoon ground turmeric
- 2 tomatoes, chopped
- 500 grams lean beef, cubed
- 500 ml water
- 1 red (bell) pepper, seeded and sliced
- 1 tablespoon chopped fresh coriander (cilantro)
- 2 fresh green chillies, chopped
- Salt to taste
- Warm chapattis, to serve
