PRAWN PATIA

Preparation Method :
- Heat the oil in a deep saute pan. Add the onions and cook for 10 minutes, until really quite brown.
- Blend the tomatoes, garlic and soaked chillies to a fine paste. Add to the pan with 2 cup of water, the spices and salt.
- Bring to a boil and cook, stirring at least for 20 - 25 minutes.
- Stir in the jaggery or sugar with tamarind and little amount of water. Bring to a boil.
- Add the prawns and cook for 5 minutes until done. Adjust the seasoning, adding more tamarind to taste. Sprinkle over the chopped coriander and serve.
INGREDIENTS
- 500 grams raw prawns, shelled, deveined and rinsed
- 100 ml Cooking oil
- 2 onions, finely sliced
- 150 grams large tomatoes, quartered
- 6 large garlic cloves
- 1 teaspoon ground coriander
- 2 teaspoon ground cumin
- 6 dried Kashmiri chillies, stalks and deseeded, soaked for about 30 minutes
- ½ teaspoon turmeric
- ½ good teaspoon garam masala
- ½ teaspoon sambhar powder
- Salt, to taste
- Grated jaggery, to taste
- Tamarind paste, to taste
- Handful of chopped fresh coriander leaves
