COD AND PRAWN GREEN COCONUT CURRY

Preparation Method :
- Cut the skinned cod fillets in pieces using a sharp knife .
- Put the green masala curry paste and the coconut milk or cream into a frying pan. Heat and simmer gently for 5 minutes, stirring occasionally.
- Add the cod pieces and prawns to the cream mixture and cook gently for 5 minutes.
- If using ready cooked prawns rather than raw shellfish, add them to the pan and heat through.
- Transfer into a serving dish, garnish the curry with fresh coriander and serve immediately with basmati rice.
INGREDIENTS
- 750 grams cod fillets, skinned
- 100 grams green masala curry paste
- 200 ml canned coconut milk or creamed coconut
- 175 grams raw or cooked, peeled prawns (shrimp)
- Fresh coriander ,to garnish
- Basmati rice, cooked to serve
