PORK VINDALOO

Preparation Method :

  • Heat the oil in a pressure cooker and fry the baby potatoes till a golden brown and keep aside.
  • Fry onions in the same oil.
  • Add pork with-first six ingredients to the fried onion. Pressure cook till almost done.
  • Open and add the fried potatoes and the masala paste. Cook till meat and potatoes are tender.
  • Add vinegar and simmer without the lid for 10 minutes.
  • Pork Vindaloo goes best with plain boiled white rice or breads.

INGREDIENTS

  • 2 kilogram tender pork cubed
  • 8 baby potatoes peeled
  • 4 cloves
  • 1 teaspoon mustard seeds
  • 5 peppercorns
  • 4 green cardamoms
  • 5 green chillies slit lengthwise
  • 2 teaspoon sugar
  • 4 large onions chopped finely
  • 5 tablespoons malt vinegar
  • 5 tablespoons sesame oil
  • Salt to taste

Masala paste (To be ground)

  • 1" cinnamon
  • 1 teaspoon cumin seeds
  • 2 teaspoon coriander seeds
  • 2 teaspoon turmeric powder
  • 5 cloves garlic
  • 1" ginger
  • 8 red chillies
