Preparation Method :
- Heat the oil in a pressure cooker and fry the baby potatoes till a golden brown and keep aside.
- Fry onions in the same oil.
- Add pork with-first six ingredients to the fried onion. Pressure cook till almost done.
- Open and add the fried potatoes and the masala paste. Cook till meat and potatoes are tender.
- Add vinegar and simmer without the lid for 10 minutes.
- Pork Vindaloo goes best with plain boiled white rice or breads.
INGREDIENTS
- 2 kilogram tender pork cubed
- 8 baby potatoes peeled
- 4 cloves
- 1 teaspoon mustard seeds
- 5 peppercorns
- 4 green cardamoms
- 5 green chillies slit lengthwise
- 2 teaspoon sugar
- 4 large onions chopped finely
- 5 tablespoons malt vinegar
- 5 tablespoons sesame oil
- Salt to taste
Masala paste (To be ground)
- 1" cinnamon
- 1 teaspoon cumin seeds
- 2 teaspoon coriander seeds
- 2 teaspoon turmeric powder
- 5 cloves garlic
- 1" ginger
- 8 red chillies
