PORK CURRY FLAVOURED WITH GARLIC AND VINEGAR

Preparation Method :
- Marinate the pork in the spice paste for over night in the refrigerator.
- Heat the oil in a pan; saute the onions till golden. Add the marinated pork. Saute on high heat for 10 minutes. Add 3 cups hot water; simmer till pork is tender. Add the green chillies, vinegar, and adjust salt. Simmer till the gravy is thick.
- Cook this dish at least 24 hours before serving with crusty bread or rice.
INGREDIENTS
- 1 kg Pork with some fat, cut into 2" cubes
Grind to a smooth paste with 5 tablespoons vinegar:
- 15-20 Kashmiri chillies
- 1 teaspoon Cumin seeds
- 1 teaspoon Black peppercorns
- 1 teaspoon Mustard seeds
- 1 Cinnamon 1" stick
- 6 Cloves (laung)
- 1 teaspoon Turmeric powder
- 2 teaspoon Ginger minced
- 20 cloves Garlic minced
- 2 teaspoon Salt
- 50 ml Peanut oil
- 4 Onions, medium, finely sliced
- 2 Green chillies, slit
- 50 ml Vinegar
