Preparation Method :
- Grind the whole spices and chillies to a fine powder.
- Grind the ginger, garlic and vinegar to smooth paste and add it to the pork along with the spices and salt, cover and marinate.
- Heat the oil in a saucepan. Add the onion and fry until golden brown.
- Add in the pork and marinade and brown gently over a moderate heat for about 10 minutes.
- Simmer to low flame, cover and cook for about an hour or until the pork is tender.
- Once the pork is tender, adjust the seasoning and serve.
INGREDIENTS
- 450 grams pork shoulder with some fat, into small cubes
- 50 grams belly of pork, into small pieces
- 75 ml Cooking oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 6 black peppercorns
- 4 green cardamom pods
- 4 cloves
- 2 cm cinnamon stick
- 6 hotter dried red chillies, halved and deseeded
- 2 tablespoon ginger, peeled, roughly chopped
- 8 fat garlic cloves
- White wine vinegar, to taste
- 1 small onion, finely chopped
- Salt, to taste
- Sugar, to taste
