AUTHENTIC PORK VINDALOO

Preparation Method :

  • Grind the whole spices and chillies to a fine powder.
  • Grind the ginger, garlic and vinegar to smooth paste and add it to the pork along with the spices and salt, cover and marinate.
  • Heat the oil in a saucepan. Add the onion and fry until golden brown.
  • Add in the pork and marinade and brown gently over a moderate heat for about 10 minutes.
  • Simmer to low flame, cover and cook for about an hour or until the pork is tender.
  • Once the pork is tender, adjust the seasoning and serve.

INGREDIENTS

  • 450 grams pork shoulder with some fat, into small cubes
  • 50 grams belly of pork, into small pieces
  • 75 ml Cooking oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 6 black peppercorns
  • 4 green cardamom pods
  • 4 cloves
  • 2 cm cinnamon stick
  • 6 hotter dried red chillies, halved and deseeded
  • 2 tablespoon ginger, peeled, roughly chopped
  • 8 fat garlic cloves
  • White wine vinegar, to taste
  • 1 small onion, finely chopped
  • Salt, to taste
  • Sugar, to taste
