SPICY LAMB STEW WITH POTATO STRAWS

Preparation Method :

  • Peel and cut potatoes into fine straws; soak in chilled salted water for 15 minutes. Drain and pat dry with a towel.
  • Heat the oil in a kadhai (wok) and deep-fry the potato straws till golden and crisp. Remove and drain on absorbent paper.
  • Combine ginger-garlic paste, chili powder, turmeric powder, green chilies and lime juice and mix well in a bowl. Add lamb and rub the marinade into the lamb well and set aside to marinate for an hour.
  • Heat oil in a large frying pan, and add onions and sauté till they turn translucent.
  • Then add marinated lamb and stir well. Now add tomatoes, sauté for a minute.
  • Then add sufficient water and stir well. Bring the mixture to a boil. Reduce the heat to low, cover and cook, stirring occasionally, for 20 to 25 minutes, till meat is tender.
  • Add jaggery, vinegar and sufficient salt, cook for another 5 to 6 minutes and remove from heat.
  • Serve hot.

  • 1 kg mutton or lamb, diced into 1 ½ inch cubes
  • 1½ tablespoon ginger-garlic paste
  • 3 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 4 green chilies, finely chopped
  • Juice of 1 large lime
  • 4 onions, finely sliced
  • 4 medium tomatoes, finely chopped
  • 1 tablespoon grated jaggery
  • 1 tablespoon white vinegar
  • 2-3 tablespoons IDHAYAM Sesame oil
  • Salt to taste
