Preparation Method :
- Wash and trim the meat. Set aside.
- The Kashmiri Garam Masala:
- Heat the pan and dry roast all the whole spices and bat leaf till they release their aroma.
- Transfer the roasted spices to the blender and grind to a fine powder. Set aside.
- The Curry:
- Heat oil in a heavy-bottomed pan. Add cinnamon stick, cloves and cardamoms and sauté well.
- Add meat pieces and cook on medium flame till it turns a rich, golden brown and mustard-yellow in colour.
- Add sugar, spice powders and sufficient salt and stir constantly and scrape the sediments from the bottom of the pan.
- Add chopped tomatoes and stir well until it disintegrates completely and absorbed by meat.
- Add whisked curd and sufficient water and mix well. Cover and cook until meat turns tender by stirring occasionally.
- Sprinkle 1 teaspoon of garam masala and mix well and cook for 10 more minutes.
- Remove from heat and transfer to a serving dish.
- Serve hot with steamed rice or roti.
INGREDIENTS
- 1 kg mixed curry-sized pieces of mutton
For the Kashmiri Garam Masala:
- 1 brown cardamom
- 4 green cardamoms
- ½ inch cinnamon stick
- 4 cloves
- 1½ teaspoon cumin seeds
- 1 teaspoon coriander seeds
- ¼ teaspoon whole black peppercorns
For the Curry Base:
- 5 tablespoons IDHAYAM HARDIL Mustard oil
- ½ inch Cinnamon stick
- 4 cloves
- 1 brown cardamom
- 3 green cardamoms
- 1 ripe tomato, chopped fine
- 1 teaspoon sugar
- 1½ teaspoon red Kashmiri chili powder
- 1 teaspoon fennel powder
- 1 teaspoon dried ginger powder
- Salt to taste
- 200 ml whisked curd
