Preparation Method :
- Process the spices with almonds in a food processor with salt to taste to a smooth paste.
- Grease a large, deep roasting pan and preheat the oven to 180°C / 350°F / Gas 4.
- Make deep pockets above the bone and deep diagonal gashes at each side.
- Push the cloves with some of the spice mixture into the pockets and gashes and spread the remainder evenly all over the meat.
- Place the meat on the roasting pan and loosely cover the whole pan with foil. Roast for about 2 hours or until the meat is cooked, remove the foil for the last few minutes of cooking time.
- Remove from the oven and allow to rest for about 10 - 12 minutes. Garnish the joint with almond flakes and serve with grilled tomatoes.

- 4 garlic cloves
- 2 inches piece fresh root ginger, chopped
- 50 grams ground almonds
- 1½ teaspoon ground cumin
- 2 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1½ teaspoon garam masala
- 6 fresh green chillies
- Juice of 1 lemon
- 250 grams plain yogurt, beaten
- 2 kg leg of lamb, Remove the fat and skin
- 9 cloves
- Salt, to taste
- 2 tablespoon blanched almond flakes, to garnish
- 4 firm tomatoes, halved and grilled, to serve
