MEAT AND SPINACH BALTI

Serves :
4

Preparation Time :
40 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat the oil in a Balti pan, wok or large frying pan over a medium heat. Add the cloves, bay leaf and cardamom pods and cook, stirring, for a few seconds.
  • Quickly add the onion, garlic and ginger and cook for about 10 minutes, stirring from time to time, until the onion starts to brown.
  • Stir in the Balti spice mix and cook for 1 minute.
  • Add the meat and cook for 5 minutes.
  • Slowly stir in the yoghurt until thoroughly incorporated, by which time the meat should be starting to brown.
  • Add the spinach and mix well. Simmer for 10 minutes. Add the garam masala and cook for a further 10 minutes. By this time the sauce should be thick and green Remove the whole spices and serve.

INGREDIENTS

  • 500 grams cooked meat - beef or lamb works well
  • 500 grams frozen chopped spinach, defrosted, retain liquid
  • 100 ml sesame oil
  • 6 whole cloves
  • 2 bay leaf
  • 6 cardamom pods
  • 2 large onion, finely chopped
  • 5 cloves garlic, crushed
  • 1 inch fresh root ginger, grated
  • 4 teaspoon Balti spice mix
  • 50 ml natural yoghurt
  • 1 teaspoon Balti garam masala
