Preparation Method :
- Grind all the whole spices and chillies to a fine powder.
- Heat the oil in a large saucepan. Add the onion and cook until well browned. Stir in all the spices and salt with little water and cook for one minute.
- Add the mutton and brown in the spice paste for about 10 minutes over a moderate heat.
- Blend the ginger, garlic and tomatoes until smooth, using a little water.
- Add to the pan with the green chillies, bring to a boil, then cover and simmer gently until the liquid has reduced.
- Pour in enough water and bring to a boil, cover and cook until the meat is tender.
- Uncover and reduce the sauce until it is creamy. Add the cream and chopped coriander, adjust the seasoning and serve.

- 9 black peppercorns
- 2 teaspoon cumin seeds
- 1 tablespoon coriander seeds
- 6 dried Kashmiri red chillies, deseeded
- 75 ml IDHAYAM sesame oil
- 1 onion, sliced
- ½ teaspoon turmeric
- 8 garlic cloves
- 2 tomatoes
- 6 green chillies, whole but pierced
- 50 ml single cream
- Garam masala, to taste
- Salt, to taste
- Handful of chopped fresh coriander
