LEAN LAMB COOKED IN SPINACH

Preparation Method :
- Heat the oil in a saucepan and fry the onions until they turn a pale colour.
- Add the fresh coriander and 2 of the chopped green chillies to the pan and stir-fry for 3-5 minutes.
- Simmer to low flame, add in the ginger, garlic, chilli powder and turmeric, keep stirring.
- Add the lamb to the pan and stir-fry for a further 5-7 minutes. Adjust seasoning with salt and chilli to taste.
- Add the fresh spinach and cook, stirring occasionally for a further 5 minutes.
- Add the water, stirring, and cook, covered, for about 30-35 minutes or until the mixture is done completely.
- Transfer the lamb and spinach mixture to a serving dish and garnish with finely chopped red chillies. Serve hot.

- 1 kg fresh spinach, trimmed, washed and chopped
- 500 grams lean lamb, with or without the bone
- 750 ml water
- 250 ml Cooking oil
- 150 grams onions, sliced
- ¼ bunch fresh coriander
- 3-4 green chillies, chopped
- 1 inch fresh ginger root, finely chopped
- ½ teaspoon turmeric
- 3-4 fresh garlic cloves, crushed
- Chilli powder and salt, to taste
- Fresh red chillies, finely chopped
