LEAN LAMB COOKED IN SPINACH

Cooking Time :
1 hour

Preparation Method :

  • Heat the oil in a saucepan and fry the onions until they turn a pale colour.
  • Add the fresh coriander and 2 of the chopped green chillies to the pan and stir-fry for 3-5 minutes.
  • Simmer to low flame, add in the ginger, garlic, chilli powder and turmeric, keep stirring.
  • Add the lamb to the pan and stir-fry for a further 5-7 minutes. Adjust seasoning with salt and chilli to taste.
  • Add the fresh spinach and cook, stirring occasionally for a further 5 minutes.
  • Add the water, stirring, and cook, covered, for about 30-35 minutes or until the mixture is done completely.
  • Transfer the lamb and spinach mixture to a serving dish and garnish with finely chopped red chillies. Serve hot.

INGREDIENTS

  • 1 kg fresh spinach, trimmed, washed and chopped
  • 500 grams lean lamb, with or without the bone
  • 750 ml water
  • 250 ml Cooking oil
  • 150 grams onions, sliced
  • ¼ bunch fresh coriander
  • 3-4 green chillies, chopped
  • 1 inch fresh ginger root, finely chopped
  • ½ teaspoon turmeric
  • 3-4 fresh garlic cloves, crushed
  • Chilli powder and salt, to taste
  • Fresh red chillies, finely chopped
