Preparation Method :
- Heat the oil in a large heavy pan add the cinnamon stick and cardamoms and fry for 2 minutes. Then add the onion and gently fry for about 3-5 minutes, stir occasionally.
- Stir in the curry paste , cumin, coriander and salt and stir-fry for a further 2 minutes.
- Remove all the fat from the lamb and cut into small cubes.
- Add the meat, apricots and the stock. Cover and cook for 1 hours.
- Serve, garnished with fresh coriander, on bed of yellow rice, with the chutney in a separate bowl.

- 2.5cm cinnamon stick
- 4 green cardamom pods
- 1 onion, chopped
- 1 tablespoon curry paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt to taste
- 150 grams ready-to-eat dried apricots
- 375 ml lamb stock
- Fresh coriander to garnish
- Yellow rice and mango chutney, to serve
