LAMB KOFTA CURRY

Preparation Method :

  • The Sauce: Heat the oil and fry the cumin seeds until they splutter. Add the onion, garlic and ginger and fry for 5 minutes. Stir in the remaining ingredients and simmer for 5 minutes.
  • The Meatballs: Put the lamb, chilli, garlic, ginger, garam masala, salt and coriander into a food processor and process until the mixture binds together.
  • Shape the mixture into equal size balls. Cover with plastic wrap and allow to stand for about 10 - 15 minutes.
  • Add the meatballs into the sauce and bring to boil, cover and simmer for half an hour or until the meatballs are cooked through.
  • Garnish with coriander sprigs and serve with coriander rice.

INGREDIENTS

  • 750 grams minced lamb 
  • 1 fresh green chilli, roughly chopped
  • 2 garlic cloves, chopped
  • 1 inch piece fresh root ginger, chopped 
  • ½ teaspoon garam masala 
  • Salt, to taste
  • 50 grams chopped fresh coriander 
  • Fresh coriander sprigs, to garnish
  • Coriander rice, to serve

The Sauce

  • 2 tablespoon IDHAYAM sesame oil 
  • ½ teaspoon cumin seeds
  • 420 grams chopped tomatoes 
  • 1 onion, chopped 
  • 2 garlic cloves, chopped
  • 1 inch piece fresh root ginger, grated
  • 1 teaspoon ground cumin 
  • 1 teaspoon ground coriander 
  • Pinch of salt 
  • ½ teaspoon chilli powder
  • 1 tablespoon tomato puree
