Preparation Method :
- Heat the oil in a large non-stick pan and sear the lamb over a high heat for about 5 minutes or until well browned.
- Add the whole spices and ginger-garlic paste, cook for a minute or two. Stir in the curry paste, salt and half a cup of the water.
- Cover and cook for about 40-45 minutes. Stir in extra water if needed.
- Add the potatoes and the remaining water, bring to the boil and then simmer for another 20 minutes or until both lamb and potatoes are tender.
- Stir occasionally and add a splash of hot water if needed.
- Turn up the heat and toss the meat in the gravy, cook till it reduce to thick consistency.
- Stir in the remaining spices, coriander and lemon juice to taste. Cook for a minute and serve hot.

- 2 tablespoon Cooking oil
- 550 grams, lean lamb, cubed, rinsed and patted dry
- 1-2 green chillies, seeded and finely chopped
- 2 tablespoon of ginger-garlic paste
- 50 grams Curry Paste
- Salt to taste
- 500 ml hot water
- 100 grams potatoes, peeled and quartered
- 1 teaspoon dried fenugreek leaves, crumbled
- ½ teaspoon garam masala
- 2 tablespoon chopped fresh coriander leaves
- Lemon juice to taste
- Whole Spices
- 4 cloves
- 1 inch cinnamon stick, lightly broken
- 2-3 black cardamom pods, lightly crushed
- 3 green cardamom pods, lightly crushed
- 3-4 small bay leaves
- 1 blade of mace
