COURGETTES WITH LAMB

Preparation Method :
- Heat the oil in a heavy pan ,karahi or wok and fry the onions until golden brown.
- Add the lamb strips and stir-fry for 1 minute to seal the meat.
- Put the yogurt, garam masala, chilli powder, garlic, ginger and ground coriander into a bowl. Whisk the mixture together.
- Pour the yogurt mixture over the lamb and stir-fry for 2 minutes, Cover and cook over a medium to low heat for 10 -12 minutes.
- Preheat the grill (broiler) add the courgettes in a flameproof dish and brown lightly under the heat for about 2-3 minutes, turning once.
- Check that the lamb is cooked through and the sauce is quite thick, then add the courgettes and serve garnished with the fresh coriander.

- 1 tablespoon Cooking oil
- 2 medium onions, chopped
- 250 grams lean lamb steaks, cut into strips
- 125 grams natural (plain) low fat yogurt
- 1 teaspoon garam masala
- 1 teaspoon chilli powder
- 1 teaspoon crushed garlic
- 1 teaspoon grated fresh root ginger
- ½ teaspoon ground coriander
- 2 medium courgettes (zucchini), sliced
- 1 tablespoon chopped fresh coriander (cilantro), to garnish
