BASIC MEAT BALTI

Preparation Method :
- Heat the oil in a Balti pan, wok or large frying pan on a medium to high heat.
- Add the garlic and cook for 1-2 minutes.
- Add the onion, reduce the heat to medium and cook, stirring, for about 8-10 minutes until the onion looks translucent and is just starting to brown on the edges.
- Blend the garam masala with the vegetable oil and enough water to make a stiff paste.
- Add the paste, meat and tomatoes to the onions in the pan and cook for a further 5 minutes, turning frequently until the spices are well dispersed.
- Slowly mix in the stock or water and bring to the boil.
- Simmer for about 10 minutes, adding more liquid if necessary, until the meat is tender.
- When the meat is cooked, sprinkle in the remaining garam masala and the coriander and mix well. Simmer for a further 10 minutes and serve.

- 500 grams cooked meat
- 50 ml sesame oil
- 5 cloves garlic, crushed
- 4 medium onions, peeled and finely sliced
- 100 grams Balti garam masala
- 100 ml sesame oil
- 5 tomatoes, skinned and roughly chopped
- 300 ml Balti stock
- Freshly chopped coriander
