Preparation Method :
- Heat the oil in a Balti pan, wok or large frying pan over a medium heat. Add the onion and garlic and cook for 10 minutes until softened and just beginning to brown.
- Add the ginger and chilli and cook for 2-3 minutes.
- Add the sardines and stir fry for 5 minutes.
- Stir in the coconut paste and Balti sauce and simmer for a further 10 minutes.
- Serve, sprinkled with coriander.

- 2 onions, finely chopped
- 2 cloves garlic, crushed
- 2.5 cm fresh root ginger, grated
- 2 green chillies, chopped
- 2 tablespoon coconut milk powder, mixed to a thickish paste with water
- 200 ml Balti sauce
- 2 tablespoon fresh coriander, chopped
