GOAN FISH CURRY

Serves :

Preparation Time :
30 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Cut each salmon fillet in half and lay on a flat surface in a single layer. Sprinkle with half the salt and the lemon juice and rub in gently. Cover and leave to marinate in the refrigerator for 20 minutes.
  • Heat the oil in a frying pan over a medium heat, add the onion and cook, stirring frequently to ensure even colouring, for 10 minutes, until a pale golden colour.
  • Add the garlic and ginger purees and cook, stirring, for 1 minute, then add the turmeric, ground coriander, cumin and chilli powder and cook, stirring, for 1 minute.
  • Add the coconut milk, chillies and vinegar, then the remaining salt, stir well and simmer, uncovered, for 10 minutes.
  • Add the fish and cook gently for 5 minutes. Stir in the fresh coriander and remove from the heat. Serve immediately with plain boiled basmati rice.

  • 500 grams salmon fillets

  • 2 tablespoon lemon juice
  • 5 tablespoon Cooking oil
  • 2 large onion, finely chopped
  • 4 teaspoon garlic puree
  • 4 teaspoon ginger puree
  • 1 teaspoon ground turmeric
  • 2 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 teaspoon chilli powder
  • 500 ml canned coconut milk
  • 5 green chillies, sliced lengthways
  • 4 tablespoon cider vinegar or white wine vinegar
  • 4 tablespoon chopped fresh coriander leaves
  • Plain boiled basmati rice, to serve
