FISH FILLETS WITH A CHILI SAUCE

Serves :
4

Preparation Time :
1 hour 20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • In a bowl ,add the lemon juice, coriander and oil and rub into the fish fillet. Leave to marinate for at least 1 hour.
  • To Make the sauce : Mix the grated ginger, tomato puree, sugar, salt and chili sauce in a bowl. Stir in the vinegar and water.
  • Pour into a pan and simmer gently over a low heat for about 5 minutes, stir occasionally.
  • Preheat the grill to medium. Lift the fish fillets out of the marinade and place them in a grill pan. Grill for about 5 minutes.
  • When the fish is cooked, arrange on a warmed serving dish.
  • The chili sauce should now be fairly thick - about the consistency of a thick soup.
  • Spoon the sauce over the fish fillets, garnish with the lime wedges and coriander sprig and serve immediately with yellow rice.

INGREDIENTS

  • 4 flatfish fillets ,about 100 grams each ,  plaice, sole or flounder,
  • 2 tablespoon lemon juice
  • 1 tablespoon finely chopped fresh coriander (cilantro)
  • 1 tablespoon Cooking oil
  • Lime wedges and a fresh coriander  sprig, to garnish
  • Yellow rice, to serve

For the sauce

  • 1 teaspoon grated fresh root ginger
  • 2 tablespoon tomatos puree (paste)
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon chili sauce
  • 1 tablespoon malt vinegar
  • 350 ml water
