Preparation Method :
- Marinate fish with turmeric and salt for about 20 - 30 minutes.
- Heat 50 ml of the oil in a non-stick saucepan. Add the whole spices and bay leaves, when they have sizzle add in the onion. Cook until golden brown.
- Blend the tomatoes, ginger and garlic until smooth. Add this paste to the pan with all the spices except the garam masala with salt.
- Cook over a medium flame, stirring for about 10 minutes or until the masala releases oil droplets.
- Reduce the heat and cook for about 5 minutes. Add 2 cups of water and bring to a boil, reduce the heat and simmer for 5 minutes. Adjust the seasoning.
- Fry the fish. Heat the remaining oil in a frying pan until very hot. Add the marinated pieces of fish and cook for 2 - 3 minutes. Turn and cook until golden brown.
- Add the fried fish, garam masala and cream to the curry. Simmer to low flame for 5 minutes.
- Adjust the seasoning and serve scattered with chopped coriander.

- 4 tomatoes, quartered and deseeded
- 2 tablespoon fresh root ginger, peeled weight

- 10 - 12 black peppercorns
- 2 bay leaves
- ½ teaspoon chilli powder
- 1 tablespoon ground coriander
- 1 teaspoon garam masala
- 2 tablespoon single cream
- 1 teaspoon turmeric
- Freshly ground black pepper, to taste
- Salt, to taste
- Handful of fresh coriander leaves, chopped
