BRAISED FISH IN CHILI AND GARLIC SAUCE

Serves :

Preparation Time :
50 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Rinse and dry the fish well. Using a sharp knife, Cleave both sides of the fish down to the bone with diagonal cuts in apart.
  • Coat both sides of the fish with the soy sauce and rice wine or sherry. Set aside for about 10 minutes to marinate.
  • Heat sufficient oil for deep frying in a frying pan . When it is hot, add the fish and fry on both sides, until golden brown.
  • To make the sauce:Heat the pan with 20 ml of the oil.
  • Add the fish to one side of the wok and add the garlic, the white part of the spring onions, the ginger, chili bean sauce, tomato puree, sugar, vinegar and stock.
  • Bring to the boil and blanch the fish in the sauce for at least 5 minutes, turn it once.
  • Add the green of the spring onions ,Stir in the corn flour paste . Sprinkle over a little sesame oil and serve hot .

INGREDIENTS

  • 1 carp about 750 grams gutted (bream, sea bass, trout, grouper or grey mullet)
  • 1 tablespoon light soy sauce
  • 1 tablespoon rice wine or dry sherry
  • Cooking oil, for deep frying
  • For the sauce
  • 3 garlic cloves, finely chopped
  • 3 spring onions, finely chopped, the white and green parts separated
  • 1 teaspoon finely chopped fresh root ginger
  • 2 tablespoon chili bean sauce
  • 1 tablespoon tomato puree
  • 2 teaspoon light brown sugar
  • 1 tablespoon rice vinegar
  • 150 ml chicken stock
  • 1 tablespoon corn flour, mixed to a paste with
  • 1 tablespoon water
  • 1 teaspoon Cooking oil
