Preparation Method :
- Heat the oil in a saucepan. Once hot add the onion and cook until soft and lightly golden.
- Add the ginger and garlic pastes and cook over a gentle flame for around 1 - 2 minutes, stirring.
- Stir in the spices, salt and green chillies. Pour in the pureed tomatoes and a cup of water and cook over a moderate flame until the liquid has evaporated.
- Stir in the yogurt until really well blended.
- Stir in a cup of water, bring to a gentle boil, stirring constantly, then simmer for about 10 minutes.
- Adjust seasoning with salt and chilli powder.
- Add fish and toss till the sauce coats the fillets. Cover and cook gently at least for 5 minutes or until the fish is cooked through.
- Serve sprinkled with a little fresh coriander.

- 100 ml IDHAYAM sesame oil
- 50 grams small onion, finely chopped
- 2 tablespoon fresh root ginger, peeled, grated into a paste
- 2 garlic cloves, grated into a paste
- Chilli powder, or to taste
- 2 teaspoon ground coriander
- Salt to taste
- 4 green chillies, stalks removed, left whole
- 50 grams small tomatoes, blended to a puree
- 2 tablespoon good Greek yogurt
- A few fresh coriander leaves, chopped, to serve
