PrintEGGS ON CHIPSTICKS
This is an unusual and delicious way of combining eggs with potato sticks, and is known as sali pur eeda in the Parsee language. It makes an unusual light lunch or supper dish and is incredibly quick to prepare and cook.
Serves :

Preparation Method :
- In a large bowl, mix the salted Chipsticks with the chopped chillies, coriander, and turmeric.
- Heat 30 ml / 2 tablespoons of the oil in a heavy frying pan.
- Add the Chipstick mixture and water. Cook until the Chipsticks turn soft, and then crisp.
- Place a dinner plate over the frying pan, and hold in place as you turn the pan over and carefully transfer the Chipsticks "pancake" on to the plate.
- Heat the remaining oil in the pan and slide the "pancake" back into the frying pan to brown the other side. Do this very gently, so that no Chipsticks break off.
- Gently break the eggs over the top, cover the frying pan, and leave the eggs to set over low heat. Season well and sprinkle with spring onions.
- Cook until the base is crisp. Serve hot for breakfast in the Parsee style, or with chapattis and a salad for lunch or supper.

- 2 fresh green chillies, finely chopped
- A few coriander (cilantro) sprigs, chopped
- 1 teaspoon ground turmeric
- 4 tablespoons Cooking oil
- 5 tablespoons water
- 6 eggs
- 3 spring onions (scallions), finely chopped
- Salt and ground black pepper
