EGG CURRY

15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a small non-stick saucepan and gently fry the onion for about 3-5 minutes or until golden.
  • Add the garlic-ginger paste, green chilli, coriander powder, turmeric, red chilli powder and salt. Follow with the tomatoes and cook at least for 5-7 minutes.
  • Add the water and bring to the boil. Add the egg halves and simmer gently for 5-7 minutes. Stir in the remaining spices and fresh coriander, serve hot.

INGREDIENTS

  • 4 eggs, hard-boiled and halved lengthways
  • 25 grams onion, finely chopped
  • 90 grams tomatoes, ground
  • 225 ml hot water
  • 1 tablespoon Cooking oil
  • 1 teaspoon ginger- garlic paste
  • 1 green chilli, left whole
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon of red chilli powder
  • ½ teaspoon garam masala
  • Freshly ground black pepper and salt to taste
  • 1 teaspoon dried fenugreek leaves, crumbled
  • 2 tablespoon chopped fresh coriander leaves
