KALIMIRCH KHEKDA

Preparation Method :

  • Heat about 3 litres of water in a large saucepan and bring to a rapid boil. Add the crabs and boil for 5 minutes till tender. Drain and cool.
  • Remove the top shells and the grey gills of the boiled crabs and set aside. Cut each crab into four pieces and crack the claws but do not remove the shells.
  • Heat a large frying pan over medium heat; add butter and when it melts, add onions and garlic. Saute till onions turn translucent.
  • Add curry leaves, turmeric, chillies, pepper and salt and mix well.
  • Add crabs, toss well and cook till crabs are heated through, taking care not to overcook them. Transfer to a bowl and serve hot.

INGREDIENTS

  • 4 large crabs, washed and cleaned
  • 2 tablespoons butter
  • 2 large onions, finely chopped
  • 6 large cloves garlic, finely chopped
  • 1 large sprig curry leaves
  • ¼ teaspoon turmeric powder
  • 2 large green chillies, slit lengthwise
  • 1 teaspoon black peppercorns, freshly ground
  • Salt to taste
