KARAHI CHICKEN WITH FRESH FENUGREEK

Preparation Time :

25 minutes

Preparation Method :

  • Add the chicken strips into a pan with water and cook for about 5 minutes. Drain the chicken and set aside.
  • In a mixing bowl, combine the garlic, chili powder and salt with the tomato puree.
  • Heat the oil in a large heavy pan. Lower the heat and stir in the tomato puree and spice mixture.
  • Add the chicken pieces to the spices and stir-fry for 5 minutes then lower the heat further.
  • Add the fenugreek leaves and fresh coriander. Continue to stir-fry until all the ingredients mixed well together.
  • Pour in the water, cover and cook for 3-5 minutes, stir in several times .
  • Serve hot with plain rice and chapattis .

INGREDIENTS

  • 150 grams boneless chicken thigh meat, skinned and cut into strips
  • 150 grams chicken breast fillet, skinned and cut into strips
  • ½ teaspoon crushed garlic
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • 2 teaspoon tomato puree (paste)
  • 2 tablespoon Cooking oil
  • 1 bunch fresh fenugreek leaves
  • 1 tablespoon chopped fresh coriander (cilantro)
  • 400 ml water
  • Plain rice and whole meal chapattis, to serve (optional)
