KOZHI VARUTHA CURRY

Preparation Method :

  • Grind the ginger, garlic and chillies to paste. 
  • Add the chilli powder, lemon juice, turmeric and salt into above paste, and mix well. 
  • Add the chicken pieces into masala paste and marinate for 3 hours, refrigerated.
  • Heat a pan add half of the oil and saute the chicken pieces on a high flame, until the chicken is dry and light browned. Remove the chicken and keep aside.
  • Heat pan and add remaining oil and saute the chopped onion until turn golden brown. 
  • Add the tomatoes, coriander power and curry leaves, stirring well, Cook until the oil separates from the masala.
  • Add the cooked chicken into pan with a little of water. Cover and cook until the masala coats the meat.
  • Add the tamarind paste the pan. Slow flame for 5 minutes, stirring occasionally.
  • Add the garam masala and pepper, stir well, slow flame for 5 minutes. 
  • Remove from flame, garnish with the coriander leaves.
  • Serve hot.

INGREDIENTS

  • 3 red chillies, broken 
  • 2 inch ginger, chopped 
  • 10 garlic cloves
  • 2 teaspoon red chilli powder 
  • 1 tablespoon lemon juice 
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 1 kg Chicken pieces
  • 50 ml IDHAYAM Sesame oil
  • 1 large onion, chopped 
  • 10 stem curry leaves
  • 100 grams tomatoes, chopped 
  • 3 teaspoons coriander powder
  • 1 ½ tablespoon tamarind paste
  • 2 teaspoon garam masala powder
  • 1 ½ teaspoon black pepper, crushed
  • 3 tablespoons fresh coriander leaves, chopped
