CHICKEN JHALFRAZI

Preparation Time :

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in wok or large pan and drop the cumin seeds and fry for about half a minute or until they begin to splutter.
  • Add the onion, peppers, garlic and ginger and fry for about 5 minutes. Add in the curry paste with other ingredients in the pan and stir-fry for few minutes.
  • Stir in the chilli powder, ground coriander, cumin and salt, add 1 tablespoon of water.
  • Add the chicken and stir-fry for about 3-5 minutes. Add the tomatoes and fresh coriander.
  • Cook, covered at least for 10 - 15 minutes or until the chicken is tender. Garnish with fresh coriander. Serve with naan bread.

INGREDIENTS

  • 750 grams chicken breast fillets, skinned, fat removed and cut into small cubes
  • 450 grams chopped tomatoes 
  • 25 grams chopped fresh coriander 
  • 2 tablespoon Cooking oil
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • ½ teaspoon chilli powder
  • 1 teaspoon cumin seeds
  • 2 garlic cloves, crushed
  • 1 inch piece fresh root ginger, chopped
  • 2 tablespoon curry paste
  • 1½ teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Fresh coriander sprigs, to garnish 
  • Naan bread, to serve
