KHARA MASALA BALTI CHICKEN

Preparation Method :

  • Mix together the mustard seeds, fennel seeds, onion seeds, curry leaves, crushed red chillies, cumin seeds, fenugreek seeds, crushed pomegranate seeds and salt in a large bowl.
  • Add the shredded ginger and garlic cloves.
  • Heat the oil in a wok or deep pan. Add the spice mixture, then tip in the green chillies.
  • Spoon the sliced onion into the pan and fry over a medium heat for 5 minutes, stirring constantly to flavor the onion with the spices.
  • Finally add the tomato and chicken pieces and cook over a medium heat , until the chicken should be cooked through and the sauce reduced.
  • Stir everything together over the heat for a further 5 minutes. Serve hot , garnished with chopped fresh coriander.

INGREDIENTS

  • 3 curry leaves
  • ¼ teaspoon mustard seeds
  • ¼ teaspoon fennel seeds
  • ¼ teaspoon onion seeds
  • ½ teaspoon crushed dried red chillies
  • ½ teaspoon white cumin seeds
  • ¼ teaspoon fenugreek seeds
  • ½ teaspoon crushed pomegranate seeds
  • Salt to taste
  • 1 teaspoon shredded fresh root ginger
  • 3 garlic cloves, sliced
  • 4 tablespoon Cooking oil
  • 4 fresh green chillies, slit
  • 1 large onion, sliced
  • 1 medium tomato, sliced
  • 750 grams chicken
  • 1 tablespoon chopped fresh coriander (cilantro)
