BALTI CHICKEN WITH VEGETABLES

Preparation Time :

Cooking Time :
40 minutes

Preparation Method :

  • Heat the oil in a large deep pan, Lower the heat slightly and add the onions. Fry until the onions are lightly browned.
  • Add half the garlic slices and fry for a few seconds, then add the chicken and salt.
  • Cook everything together, stirring, until all the moisture has evaporated and the chicken is lightly browned.
  • Add the lime juice, green chillies and all the vegetables to the pan. Increase the heat and add the rest of the garlic. Stir-fry until the chicken is cooked through and the vegetables are just tender.
  • Transfer to a serving dish and garnish with the lime slices, Fresh coriander and green chilli strips, if wished. Serve immediately.

INGREDIENTS

  • 5 tablespoon IDHAYAM sesame oil
  • 2 medium onions, sliced
  • 4 garlic cloves, thickly sliced
  • 500 grams skinless chicken breast fillets, cut into strips
  • Salt
  • 2 tablespoon lime juice
  • 3 fresh green chillies, chopped
  • 2 medium carrots cut into batons
  • 2 medium potatoes, peeled and cut into strips
  • 2 medium size aubergines, cut inti strips
  • 1 medium courgette (zucchini), cut into batons
  • 4 lime slices
  • 1 tablespoon chopped fresh coriander (cilantro)
  • 2 fresh green chilies cut into strips (optional)
